Vegan MoFo - Apple & Strawberry Crumble


I don't often make crumbles because my mum makes the best crumbles ever & mine pale into comparison, but it is a very quick & easy to veganise dessert option & you can mix it up by using different fruits or putting different nuts & spices in the topping.

Apple & Strawberry Crumble 

Ingredients (serves 4)

  • 2 apples peeled & diced
  • 10 strawberries, halved & stems removed 
  • Juice of half lemon
  • 1/2 cup plain flour
  • 1/4 cup oats
  • 1/4 cup brown sugar
  • 1/4 cup nuttelex

Method

  1. Preheat oven to 180 degrees
  2. Place apples in frypan or saucepan over medium heat with the lemon juice & a couple of tablespoons of water
  3. Cook apples until softened, keep adding water when it dries up
  4. As the apples are cooking, add all the rest of the ingredients to a medium sized bowl & rub together until well mixed & resembling breadcrumbs
  5. Transfer apples to a baking dish & top with the strawberries, or if you have cooked your apples in an oven proof saucepan like I did you can use that as your baking dish
  6. Top the fruit with the crumble mix & place in the oven until browned (about 15 minutes)

  1. Yum, looks delish! Not sure about hot strawberries though - I have a bit of an aversion for hot fruit, except of course for apples (hot banana and hot pineapple is just WRONG in my opinion!). I've never tried hot strawberry. Maybe I should....
