I love the blog Vegan Yum Yum & have made a few recipes from there which have all been really good. When I saw
this recipe I thought it was a brilliant idea because it includes all of my favourite ingredients & it looked amazing. I made it with some day old ciabatta bread & the only thing I did differently was to add a bit of red wine to the tomato sauce. I thought that the bread would end up super soggy & mushy but it didn't at all, even when I had it for lunch for the next two days. Greg wasn't a huge fan of it but I liked it & would like to make it again, maybe varying it with different sorts of vegies in it.
