Where's the Beef week - Day 3 - I can't believe it's not meat pies

More deliciousness!  I really liked these 'I can't believe it's not meat pies' & found the filling not unlike the La Panella pies, but with red wine.  These are really easy & really versatile because you can flavour them to your tastes.  I left out the mushrooms because I didn't have any but next time I will certainly add them in next time.  I used the following ingredients:


INGREDIENTS
  • 1/2 cup red wine
  • 1/2 cup massel beef stock
  • 1 tsp onion powder
  • 1/2 cup tvp
  • 1 tbsp tomato paste
  • 1 tbsp worcestershire sauce
  • 1 tbsp flour

Tempeh & Eggplant Pot Pies

After reading this post on The Tropical Vegan, I decided to make the Tempeh & Eggplant Pot Pies from The Vegan Table as I had some tempeh in my freezer & an eggplant in my fridge.  I followed the recipe exactly, although I left the celery out because I hate it & for the tomato sauce I used a can of diced tomatoes.  I really liked these, but next time I make them I will add tomato paste & red wine to the filling to give it a bit of extra flavour.  The biscuit topping is amazing!  I want to eat nothing but pot pies topped with that biscuit topping from now on.

Pies

We are pretty fond of pies in my household, particularly Greg - although strangely he does not really like Funky Pies whereas I really like them. Recently I was at Radical Grocery at around lunchtime & decided to get myself a Funky Pie, I had the Chic n Cheezy (I think that is what it is called as it isn't on the website). It is filled with a thick cheesy sauce with 'chickeny' soy protein chunks & broccoli - delicious!!!



Greg is more of a fan of La Panella mushroom pies & we had some for dinner recently with a salad with a delicious dressing made from roasted capsicum & mayo. La Panella pies are super cheap & easy when you don't really want to cook.
