Vegn MoFo - Soba Noodle Sushi (and Sweet Potato for Holly)

I saw this on Courtney's blog awhile ago & immediately wanted to make it since I love both soba noodles & sushi.  This is super easy & really good & it is an amazingly fast meal from starting to eating was only about 15 minutes.  My sushi contained tofu which had been marinated in soy sauce & hoisin, red capsicum & avocado.  The recipe is here.  Courtney is also doing an A-Z for Vegan MoFo so check out her blog to see what she is doing for the month.





And, while we are on food starting with S, we gave Holly some sweet potato yesterday for her first foray into the world of solid food!  She was not super interested & I think she might still be a bit too young but it was very, very cute.

Baked treats from my mum

Last Saturday I gave birth to my daughter Holly, she is absolutely amazing & life with her is fantastic.  So far I am coping pretty well with the broken sleep but have had a lot of help - Greg has been home so has been cleaning & organising meals & my mum brought over a care package of baked treats for us & for when we have visitors.

From the Joy of Vegan Baking she made pineapple walnut bars & banana chocolate chip muffins - yum.

Easter treats

As I was seeing my family for Easter lunch I decided to make them some Easter treats.  I made the super easy & delicious cookies & cream truffles from Fat Feminist Foodie, but covered them in Sweet William milk chocolate & piped white chocolate crosses on them so they kinda looked like hot cross buns. I also made Sugar Cookies from 'The Joy of Vegan Baking' which I cut into Easter shaped & badly piped some icing on.  These biscuits were nice but they became super sweet with the icing.
